Exploring Czech Food – Part VI - Famous Potato Salad (Poznavame Ceska Jidla – Cast VI - Slavny Bramborovy Salat)

Czechs love potato salads. They use it to make special sandwiches called “chlebicky,” but also just as a side to main dishes. A typical Christmas dinner includes a fish or pea soup and potato salad with fried carp or schnitzel. It is hard to find a potato salad that tastes like the one from home. The recipe below truly represents the real potato salad you can find in the Czech Republic. Its great taste will really make you famous amongst Czech communities.
Here is a recipe for a group of 10-15 people:
Ingredients:
Potatoes (10 pieces)
Carrots (4 - 6 pieces) - cut into larger chunks
Celery - cut into larger pieces (amount according to taste)
Parsley - the root or parsnip (3 - 4 pieces) - finely cut
Celery stalks - finely cut (amount according to taste)
Onions (according to taste) - finely cut
Pickles (4 - 6 pieces, or more to your liking) - finely cut
Eggs (1 - 3 according to taste) - boiled
Canned peas (1 tin)
Salt
Pepper
Mayonnaise
Preparation:
A day before cook potatoes with brown skin in unsalted water. Prepare the carrots, celery root and parsley root the same way. When done, place in the refrigerator overnight. The next day peel the potatoes and cut them in small pieces or press through potato slicer. Prepare the cooked carrots, celery and parsley the same way. Finally, add chopped celery stalks, onions and pickles. Then add boiled eggs finely cut or pressed through the slicer. Add salt, pepper and mayonnaise. Mix. Finally, add canned peas (add last to prevent crushing).
Serve cold. Bon appétit!

Češi milují bramborové saláty. Používají je k přípravě chlebíčků, ale také jen jako příloha k hlavnímu jídlu. Typická vánoční večeře se skládá z rybí nebo hrachové polévky a bramborového salátu se smaženým kaprem nebo řízkem. Je těžké najít bramborový salát, který chutná jako ten z domova. Recept níže skutečně reprezentuje pravý bramborový salát, který můžete najít v České republice. Jeho skvělá chuť vás opravdu udělá slavným mezi českými komunitami.
Zde je recept pro skupinu 10-15 osob:
Přísady:
Brambory (10 kusů)
Mrkev (4 - 6 kusů) - nakrájená na větší kousky
Celer - kořen nakrájený na větší kousky (množství dle chuti)
Petržel - kořen (3 - 4 kusy) - nakrájená nadrobno
Celer nať nakrájená nadrobno (množství dle chuti)
Cibule (dle chuti) - nakrájená nadrobno
Kyselé okurky (4 - 6 kusů, ale i vice podle chuti) - nakrájené nadrobno
Vejce (1 - 3 dle chuti) - vařené
Zavařený hrášek (1 konzerva)
Sůl
Pepř
Majonéza
Příprava:
Den předem uvařte brambory s hnědou slupkou vcelku v nesolené vodě. Stejným způsobem uvařte mrkev a celerový a petrželový kořen. Uvařené vložte do lednice přes noc. Na druhý den oloupejte brambory a nakrájejte na drobno a nebo prolisujte přes drobný kráječ. Stejným způsobem nakrájejte uvařenou mrkev, celer a petržel. Přidejte drobně nakrájenou celerovou nať, cibuli a kyselé okurky. Poté přidejte uvařená vejce nakrájená nadrobno nebo prolisovaná přes kráječ. Přidejte sůl, pepř a majonézu. Promíchejte. Nakonec přidejte zavařený hrášek (přidává se poslední, aby se nepromačkal).
Podávejte studené. Přejeme vám dobrou chuť.

My husband’s family is from Czechoslovakia (Zbutske Dluhe and Kosice), so I may have to try this recipe out for them. We traditionally have a mushroom soup made with sauerkraut and rice with Christmas dinner along with nutroll and fruit and nut cookies. This would be a nice addition!
I am trying to learn as much about his family history as I can for my boys before his Mom’s cousin passes. His grandparents passed long ago and his Mom doesn’t know/remember a lot about her extended family. I will be back for sure! Vesele Vianoce! Stastany Novy Rok!
